Here is the delicious recipe for honey madeleines proposed by Clélia.
For dessert, as a snack or with tea, they are to be enjoyed without moderation!
Ingredients for about 20 madeleines:
- 100 g butter
- 100 g icing sugar
- 40 g flour
- 40 g ground almonds
- 100 g egg whites (3 large whites)
- 1 tbsp. tablespoons of liquid honey (little reminder: always good, my reference is Eric Daquin's honey in Eguilles (13), the best honey ever!)
Honey madeleines recipe
1- Mix the flour, sugar and almond powder
2- Whip the egg whites until stiff and incorporate them into the sugar, flour and almonds mixture.
3- Bring the butter to a boil in a saucepan. Let it cook until it begins to brown and smell a nice nutty smell. (be careful not to burn it!). Immediately incorporate it into the 1st preparation then add the honey.
4- Place the dough in the madeleines. (If you don't have one, you can also use financier molds or other small molds. The madeleine won't have the charm, but it will also be good!) Let stand in the refrigerator for 2 hours before cooking.
5- Bake 12 minutes in an oven preheated to 200 °. Your madeleines should be golden brown. Unmould the madeleines on a rack right out of the oven.
The caramelized and crispy outside, the soft inside, all incredibly tasty? Perfect they are successful!
These madeleines are even better a few minutes after taking out of the oven. Cook them just before tasting.
You can also freeze your plates of raw madeleines, and you cook them for 15 minutes at 200 ° whenever you want. Convenient for a small impromptu dinner, a gourmet tea / coffee ...
