Both creamy and rich in vitamins, this pumpkin, sweet potato and orange soup is a delight.

Ingredients for 4 persons :

  • 300 g of pumpkin
  • 200 g sweet potato
  • 1 onion
  • 60 g semi-salted butter
  • 50 cl of vegetable broth
  • 2 oranges
  • 10 cl of liquid cream
  • Salt, freshly ground pepper

Pumpkin and sweet potato vitamin soup

- Peel, wash, peel and dice the pumpkin.

- Peel, wash and dice the sweet potato.

- Peel, wash and chop the onion.

- Melt 30 g of butter, place the sliced ​​onions, pumpkin, sweet potato, stir and pour in the vegetable broth. Cook until the blade of a knife easily penetrates the flesh of the vegetables.

- Wash then remove the juice and zest of the oranges.

- Add the juice of the 2 oranges to the vegetables and mix until you obtain a smooth cream. Check the seasoning.

- Whip the liquid cream into a whipped cream, stir in the orange zest and pepper.

- Arrange in a tureen or small containers, add the whipped cream, a turn of the mill and taste immediately!


You can complete this velouté with toast, cured ham or dried meat, a poached egg, etc.
